Weingut Fischer, Sooß, Thermenregion - St Laurent red wine

The Fischer winery in red wine village Sooβ south of Vienna looks was founded in 1662. Christian Fischer took over the winery from his father in the 1980's and started ageing his red wines in French oak barriques, a novelty in the region at the time. Now fully organic, Christian and his daughter Franziska produce elegant, complex and age worthy reds.

Fischer's classic St Laurent red wine is made from handpicked grapes from a number of vineyards around Soosz. St. Laurent is a rare grape variety - only 732 ha are grown all over Austria - related to Pinot Noir. Like Zweigelt, St. Laurent is an autochton grape variety, unique to Austria. Fischer's St. Laurent vines average 33 years in yielding only 43hl/ha. Fermented 12 days in stainless steel and matured in old, large oak. Dark ruby in colour, red cherry and red plums, delicate and soft, velvety, long finish. Wonderful with roast chicken or pork.

About Weingut Fischer

The Fischer family have made wine in Sooß, in the Thermenregion south of Vienna, since 1662 — over three and a half centuries on the same land. Christian Fischer took over from his father in the 1980s, and was among the first in the region to age red wines in French oak barriques, a novelty at the time. Today Christian works alongside his daughter Franziska, producing wines that have made the estate one of the standard-bearers of what the region calls "Burgund Österreichs" — the Burgundy of Austria. Christian's hand is described as elegant, restrained, layered: a style that reads like calligraphy.

The estate's focus is twofold: burgundian-style reds — particularly Pinot Noir and the indigenous St. Laurent — alongside characterful whites built around the autochthonous Spätrot (Zierfandler) and Rotgipfler, often called "white wine of burgundian format." Zweigelt, which thrives in the warm Pannonian climate, rounds out the range. Certified organic since 2013, the estate has long focused on preserving soil fertility through careful rotation and minimal intervention. A small distinctive sideline: Fischer also produces Verjus — the tart juice pressed from unripe grapes — both as a culinary ingredient (PUR) and as an alcohol-free Frizzante alternative (FRIZZ). "Good wine comes from the perfect interplay between nature and the winemaker" is Christian's way of explaining it.
